    Love2…keep warm

    So it is freezing in most of the country…even dipping into the 30’s-40’s here in Florida.What better to keep you warm but some soup…I don’t mean your mothers chicken soup or boring vegetable soup. I am talkin’ gourmet the “best soup I have had” kind of soup.

    When I worked in the garment center in NYC we had Hale & Hearty soup every day of winter. I am not sure which came first the “Soup Nazi” from Seinfeld or Hale & Hearty…either way this is a store that serves over 10 kinds of soup a day. Gourmet soup that is amazing. My favorite Senegalese Chicken Soup is the most wonderful soup I ever had. Your mouth explodes with excitment from all the different flavors. The recipe might sound a bit different but, step out of the boring box and try it! You will not be disappointed. My friends could not believe I actually made it myself.

    Now the cool tip of the day….did you know if you love a certain food in a larger restaurant chances are you can get the copycat recipe on line….try it I did and low and behold there it was Hale & Hearty Senegalese Chicken Soup! A few different copy-cat versions too. I have taken a bit from all and have come up with my own version. If you try it PLEASE let me know what you think!
    Senegalese Chicken Soup (serves 6-8)

    1         Large onion, diced small
    4 T       Olive oil
    1 tsp     Chopped garlic
    6 T       Curry powder
    2 tsp     Cayenne pepper
    5 cups    chicken broth
    2 cups    Tomato puree
    1/2 cup   Smooth peanut butter
    1 lb      Chicken white meat, cooked or shredded or cut into small pieces
    1/4 cup    Scallions, sliced thinly

    Cook onions in olive oil until soft. Add garlic and cook two minutes. Add curry powder, cayenne pepper and fry for an additional two minutes. Add chicken broth and stir well. Add tomato puree. Simmer for 30 minutes. Do not boil. Stir every 10 minutes.

    Combine peanut butter and 2 cups of soup in another bowl until very well blended (might take a little time) you can even put into your blender but leave the top of because it is hot. When smooth, add back to remaining soup and stir well.

    I usually buy a chicken already cooked at the supermarket but you can boil breasts for 20 minutes if you want. Cut into small pieces and add to soup. Add scallions at end for 5 minutes.
