Cold Corn Casserole

This simple yet delish cold corn casserole is p erfect for busy weeknights. Only five ingredients and no cooking!

What you need:

 4 cups Shredded Mexican Style cheese

1 Cup of Mayo

1/4 to 1/2 Purple Onion

2 Cans of Mexicorn – I used 1 can of Mexicorn and 1 regular corn.

1 bag of Fritos – We used chili cheese fritos but any flavor works.

How to make:

Drain cans of corn completely, place in bowl.

Add chopped or diced onion – to preferred size.

Add cheese and Mayo.

Mix completely.

Chill in fridge for a few hours.

Serve with Fritos.

(Important not to mix Fritos into bowl with full casserole, they will be come soggy. Only serve with Fritos separately on plate or bowl)
