    Crockpot Sour Cream & Salsa Chicken

    It’s that time of the year…Crockpot Season!  We love using our crockpot and we would love to have you submit some of your favorite crockpot recipes for us to share with our readers!  One of our favorites is a simple, sour cream and salsa chicken recipe.

    Ingredients:
    4 Skinless boneless chicken breast halves
    1 package of taco seasoning
    1 cup of salsa
    2 Tablespoons Cornstarch
    1/4 cup sour cream

    Directions:
    Spray crockpot with cooking spray (or you can get the crockpot cooking bags).  Add the chicken breasts.  Sprinkle taco seasoning over the chicken.  Top with salsa.  Cook on low for 6-8 hours.  When you are ready to serve, remove chicken.  Place 2 tablespoons of the corn starch in a small amount of water and stir well.  Stir the cornstarch mixture into the salsa sauce.  Stir in your sour cream and heat for 5 minutes.  Replace chicken and serve.

    To alter this recipe, you can use reduced-sodium seasoning and light or fat free sour cream.  If you would like a little crunch, crumble up some doritos or tostitos.
