    Quick & Easy Taco Bake

    We usually have one “taco-ish” dish every week, just like we have one pasta dish every week.  It’s how I roll.  One day I was looking for something different to make and I stumbled upon a taco pie.  I believe it was directly from the roll or croissants where they said to use the dough as the pie crust.  I more or less adapted that recipe into something that my kids devour when ever I make it.  It’s made very similar to my Taco Quesadillas.  It is a quick & easy taco bake that the whole family will love!  Guaranteed!

    Quick & Easy Taco Bake

    I’m always trying to come up with quick and easy ways (and inexpensive) ways to feed this growing (in age) family.  It’s hard to come up with meals that all five of us will eat (not to mention the extra mouth when my oldest daughters boyfriend joins us for dinner) so when I find something that works, I often add it to my rotating monthly meal calendar.  This quick and easy Taco Bake is by far one of the family’s favorites.  I love it because it is inexpensive and we never have any left-overs!

    The ingredients are simple:

    1-2 pounds of ground beef.   *I used 1.7 pounds of ground beef in a 9×13 casserole dish.*  (not shown)
    1 package of taco seasoning
    1/3 cup of salsa
    3 Tablespoons of Taco Sauce
    1/4 cup of water (not shown)
    1 tube of crescent rolls
    2 cups of shredded cheddar/taco cheese
    1/2 of a Party Size bag of Doritos (add more or less to your liking)
    *optional – sour cream, lettuce, tomato, and chives 

    Preheat oven to 375 degrees.  Lightly spray a 9×13″ casserole dish.  Line the casserole dish with crescent rolls and seal any seams.

    When your oven is preheated, place casserole dish in and bake for 5 minutes then place on top of stove until you’re ready to add your meat mixture.

    While the crescent rolls are baking, start browning your ground beef.  Brown until all the pink is gone.  Once the pink is gone (about 5 minutes), drain to remove the excess fat.

    Place back in pan and cook on a low simmer.  Add a package of taco seasoning, taco sauce, salsa and water.  Gradually adding the water because you just want it wet enough to blend all the ingredients together so it looks more like it’s been coated with the ingredients.  Simmer for about 3 minutes.

    Once it’s all blended, add it to your casserole dish.  Be sure to cover the entire bottom of the dish.

    Once the crescent rolls are completely covered,  add 1 cup of the shredded cheese to the top.  Be sure to cover the entire casserole with it.  It will be spotty, but that’s ok!  Pop it back into the oven for about 5 minutes or until the cheese is completely melted.  While that’s baking, crush up Doritos.   I use a half of a party size bag because my family loves Doritos and the crunch!  Use as much or as little as you’d like.

    When the cheese is melted, take out the dish and add crushed Doritos and top it off with the remaining cheese.

    Bake again until the cheese is completely melted (usually another 5 minutes).

    While it’s baking, I always start cutting up my lettuce, tomatoes and chives.  We just drizzle what ever we want right on top of our piece and enjoy!
