Quick & Easy Teriyaki Chicken

 

My kids LOVE this recipe and it’s super easy to make and it only has a few ingredients which I LOVE!

Ingredients you will need:

Cubed Chicken Breast {I use about 4 boneless, skinless chicken breasts and cut into cubes}
Chopped Onion {one small one will do}
5 Idaho potatoes peeled and cubed
Teriyaki Sauce

Directions:

You will want to boil your potatoes just until they are tender.  You don’t want them to fall apart, but you want them to still be able to hold their shape because you aren’t making mashed potatoes here.  While your potatoes are boiling you can cook your chicken.  Place it in a fry pan with a little oil and start browning lightly.  You don’t want it to burn or get a crispy, you just want it to be a light, golden brown making sure it is fully cooked.  Once your chicken is cooked, add your onion.  You just want to simmer at this point because you don’t want anything to burn.  Let your onions get soft.  Once your potatoes are cooked through you will want to drain them, then add them to your skillet.  Now, for the final touch…the Teriyaki sauce!  I usually add a good 8 Tablespoons {or more} but you can add as much or as little as you’d like.  The flavor just gets a little stronger and a bit more salty.  You can serve with broccoli or what ever veggie you’d like.  Doesn’t it look GOOD???
