It just so happened that today was an extremely stressful day that started out with my trying to chase down my son’s school bus, got progressively worst, just ended with a meal that I didn’t have to slave over to feed my family.
I decided to make the Sweet Corn, Chicken and Rice Skillet dinner. What I like about this recipe is that in using Sunshine Sweet Corn from Florida, I know that it is non-GMO, extra tender, and regulated for quality control. When you have a family you have to take care of, you look for certain criteria and this corn is for sure, without a double, the cream of the crop because once you taste it, you’re undoubtedly hooked!

Ingredients Include:
Vegetable Oil
Chicken thighs
Zucchini
Onion
Garlic
Flavored Rice
Sunshine Sweet Corn
Recipe Steps:
- Heat oil in skillet
- Place chicken in skillet
- Brown chicken in skillet – remove and set on separate dish
- Cook zucchini, onion and garlic until soft
- Then add rice mixture
- Next, add your corn
- And finally, add water
- Cover and cook until done
