    Weekly Dinner Menu – Week 3

    This week I am reaching deep into the pages of my family cookbook!  I am trying recipes that my mom has given me that I don’t ever remember eating…and maybe I didn’t but she gave me these {letter graded for taste} recipes.

    Monday – Chicken Noodle Casserole {above}

    Ingredients:
    Can of Cream of Chicken Soup {I used Cream of Celery}
    1/2 cup of milk
    1/4 cup finely grated parmesan cheese
    pepper to taste
    2 cups cooked diced chicken
    2 cups cooked egg noodles
    1 bag of frozen vegetables
    1/2 cup shredded cheddar cheese

    Mix all of the ingredients together and bake {400 degree oven} uncovered for 25 minutes.

    With this recipe, I omitted the frozen vegetables because my kids will not eat them mixed together.  They are not really good “casserole” eaters.  It actually tastes like a mock chicken pot-pie!  I served it with green beans and croissants!

     

    Tuesday – Beef & Pepper Stir Fry with Rice
    Kids had a snow day so we just made frozen hamburgers, fries, onion rings and tater tots! 🙂  Sorry, no photo!

    Wednesday – Taco Bake {above}

    Ingredients:
    1 pound ground beef
    1 medium onion chopped
    1 – 15 ounce can of tomato sauce
    1 package taco mix
    2 cups of cheddar cheese
    8 ounces of pasta noodles {we used elbow} cooked
    (tortilla chips and sour cream – optional)

    Brown ground beef and onions together.  Drain fat.  Mix in tomato sauce and taco seasoning.  Bring to a boil and then simmer for 20 minutes.  Once done, add 1.5 cups of cheese and cooked pasta noodles and mix in.  Put in baking dish and top with remaining cheese.  Bake on 350 degrees for 30 minutes.  {I was pressed for time so I only baked it until the cheese on top melted and it was fine.}  Kids topped it with Pop Chips Salsa Tortilla’s and some sour cream.  It was DELISH!!!

     

    Thursday – Crock Pot Pork Chops with Potatoes

    Friday – Pizza

     

    Saturday – Spiral Ham with Mashed Potatoes & Corn

    Sunday – Baked Ziti

    {recipe to follow}

     

    Sorry I will have to update this post as soon as I figure out why I cannot add images!! It’s driving me nuts!
