    Weekly Menu – Week 2

    This week is a crazy one with a lot of places to go and things to do after school so it is going to be a very quick and easy week for dinners. Read on and you’ll see what I mean…

    Monday-
    Italian Chicken {basically it’s just chicken that is marinated in Italian dressing then baked} and it is served with Rice-a-Roni’s Broccoli AuGratin rice and some green beans.

    Tuesday-
    Meatloaf- Mix together a pound and a half of ground beef {any kind}, 1/2 cup of milk, one egg, 1/2 tsp salt, 1/8 tsp of garlic salt, pepper and dry mustard, 7 pieces of bread {broken into pieces} and a half an onion diced. Form into a loaf and bake on 350 degrees for 60-75 minutes. We serve this with mashed potatoes and corn. I didn’t want to use my oven so I popped it into the toaster over on convection and let it do it’s work. It was the first time I cooked it in there and I will say I was a bit nervous as to how it would come out, but it was just as good as if I would have baked it in the bigger, more expensive gas oven!

    Wednesday-
    Breakfast for dinner! The kids favorite! I gave them their choice and it was unanimous, chocolate chip pancakes! Super delish! I just used a boxed mix and added some chocolate chips. The best part is that I usually make extra to freeze for breakfasts during the week. Tonight I put some in the fridge after dinner and I had one later for a snack! Turns out just like a cold chocolate chip soft cookie! YUM

    Thursday-
    Today is Taco Thursday! Nothing easier than browning some ground beef and making some tacos with all the fixings! I like to make myself a nice taco salad instead of a traditional taco. Load up on the lettuce and veggies and add in a couple Doritos {or I use PopChips Salsa flavored tortillas – less calories and all natural!!!}

    Friday-
    Pizza night again! That is our Friday night go to meal. I will either make my own or order one. I’m thinking of ordering again, but not sure.

    Saturday-
    Sandwich Night! This is where the kids can pick their sandwich out of, egg salad, grilled cheese, luncheon meat, or BLT’s. It’s fun when the kids can pick out their own dinner. I try to add some type of veggie or fruit with our sandwiches whether it’s carrots and ranch or an apple.

    Sunday-
    Tamale Pie Casserole – This is a great dish to make ahead and serve because it taste better the next day! Take 2 pounds of ground beef and brown it. Drain fat. Add one small can of tomato sauce, one can of corn {drained}, one half of a chili seasoning packet, and sprinkle in some chili powder. When it’s all mixed, add about 2 tablespoons of corn meal making sure it is well blended. Pat the mixture down into an oven safe casserole dish or pan. Top entire meal with a heavier sprinkling of chili powder and pat down so it looks slightly packed. Cover with aluminum foil and bake on 350 for 30 minutes. Take off foil and bake an additional 30 minutes. Top with taco cheese and sour cream.
