Mango Salsa Shrimp Tacos
It’s Thursday time for Tacos, but not just any tacos- Mango Salsa Shrimp Tacos. These tacos are delicious and easy to make, and you can enjoy them by the pool.
What you will need:
1-2 cups organic mango cubed (frozen or fresh)
Juice of 1-2 organic limes
1 cup chopped organic cilantro
2 chopped medium organic tomatoes
½ chopped medium organic onion
1 chopped organic green onion
1 minced organic jalapeno
½ tsp fajita seasoning
Once everything is chopped and squeezed mix well in a large bowl. Mango Salsa is ready store in fridge or set to the side—now time to make the shrimp.
1lb organic shrimp
4 Tbs lime juice
1-2 Tbs fajita seasoning
½ kosher salt
1 tsp chili powder
Oil or Butter
In a heated grill pan, with a little bit of oil or butter add your shrimp. Season with fajita seasoning, salt, and chili powder—and squeeze lime over the shrimp. Once the shrimp have cooked for about 3-4 min. they are ready. Make sure not to over crowd the pan*
Now warm up your flour tortillas and place shrimp and salsa inside–enjoy!
