What you will need –
Fresh Tomatoes – I used 1 and 1/2 large tomatoes
red onion – I used 1/2 onion
Fresh cilantro – to your taste
Jalapeno – optional
sugar – about 1 teaspoon ful
corn – 2 to 3 cobs
avacado – 1
(All ingredients can be increased or decreased depending on size need to feed everyone. This amount fed our family of 4)
How to make –
Chop tomatoes, cilantro, onion, jalapeno and place in a bowl. (I chopped all in a food chopper).
Add sugar and some lime juice.
Cut corn from cob and roast in a pan with butter or olive oil.
place in bowl with tomatoes, onion, etc.
When ready to serve, add chopped avacado, salt and pepper, and garlic powder to taste.
Serve with chips and enjoy!
