If there is one food that my entire family eats, it’s corn.  I think my family could eat corn with every meal…no joke.  It’s that one, go-to vegetable that I know if I make, will be eaten.  However, I know good things are coming our way when I see that my local grocer has fresh, Sunshine Sweet Corn from Florida!  You don’t have to wait until summer for guaranteed delicious, sweet tasting corn because it’s available NOW!  You can usually find this sweet-tasting golden goodness in April and May.

Sunshine Sweet Corn from Florida

When I think of Sunshine Sweet Corn from Florida, I already know it will be an easy addition to my spring meals.  I took a look at the Sunshine Sweet Corn website and picked out a recipe to try that was quick and easy because as a mom, I know my time is hard to come by!  It just so happened that today was an extremely stressful day that started out with my trying to chase down my son’s school bus, got progressively worst, just ended with a meal that I didn’t have to slave over to feed my family.

I decided to make the Sweet Corn, Chicken and Rice Skillet dinner.  What I like about this recipe is that in using Sunshine Sweet Corn from Florida, I know that it is non-GMO, extra tender, and regulated for quality control.  When you have a family you have to take care of, you look for certain criteria and this corn is for sure, without a double, the cream of the crop because once you taste it, you’re undoubtedly hooked!

Let’s get on to the recipe!

Ingredients Include:

Vegetable Oil
Chicken thighs
Zucchini
Onion
Garlic
Flavored Rice
Sunshine Sweet Corn

Recipe Steps:

  1. Heat oil in skillet
  2. Place chicken in skillet
  3. Brown chicken in skillet – remove and set on separate dish
  4. Cook zucchini, onion and garlic until soft
  5. Then add rice mixture
  6. Next, add your corn
  7. And finally, add water
  8. Cover and cook until done

I mean, it basically doesn’t get any easier than that!  Within 30 minutes you have a delicious, home-cooked meal that everyone will enjoy!  Now you can run out, visit your local grocer and get your own Sunshine Sweet Corn because it’s on sale now!
