Right now you can find the most perfect fresh basil at your local farmer’s market, and nothing beats fresh basil with a little pork chop. This dinner is nice and light– perfect for summer months, and hearty enough to give you a little energy to keep up with all summer has to offer.
What you will need:
- Organic Pork Chops about 5-6
- 1 1/2 cups of fresh chopped basil (1/2 for pork chops)
- 1-2 chopped tomatoes
- 1tbs of kosher salt
- 1tbs of oregano
- 1bs of pepper
- 3 cloves minced garlic (2 1/2for pork chops)
- 1/2 onion (1/2 for pork chops)
- Juice of 2 lemons
- Bag of pasta
- Olive Oil
- Organic cheese or rice cheese
Make sure to have your oven pre-heated 350*
First you want to lightly oil up your pork chops with olive oil.
Now season pork chops with; oregano,salt, pepper, garlic, onions, and basil. Make sure each pork chop has a little bit of everything on it. Squeeze some lemon on the pork chops before they go into the oven for about 45-60 minutes. *All ovens vary*
While the pork chops are in the oven you can work on the pasta.
After pasta has been boiled, drain and put into a large bowl.
Add the lemon juice to pasta making sure to coat all of it. Next add tomatoes, basil, garlic, onions, and a about 1tbs of olive oil. Give the pasta a nice mix and you’re done.
Once pork chops are done place them to the side.
Broiler Time. Set your oven to broil this is where the cheese comes in. Top your pork chops with cheese and if you would like– you could also add more basil or onion at this time. Place in broiler for about 2-3 minutes *keep an eye on it* Cheese should become nice and golden.
Plate up– you’re done!
