    What’s Your Favorite?

    Holiday Sweets are my thing!  Every Christmas I am in charge of the baking.  I bake cookies to give away as gifts, to bring to parties, and to just enjoy with my own family.  I have taken on my grandma’s tradition of baking.  I don’t do nearly as much baking as she had but the baking I do, I enjoy and really believe I channel her spiritually during the holiday months.  She hada killer chocolate chip cookie recipe which I cannot share because that is top secret and I have mastered it and feel pretty good about it.  She was Italian so those that come from an Italian family knows, cookies….there is nothing else like those good old fashioned Italian, homemade cookies.

    holiday sweets #12daysofblogmas  This year I’ll be making some other creations of my own and some that I have received from others, like this one from Cookina.  I love me anything peppermint, especially during the holidays!  Peppermint ice cream…yes please!  Peppermint bark…yes please!!  Peppermint cookies…uhm, yes please!  Check out this holiday sweets recipe….

    Ingredients:

    1 cup Salted butter, softened
    1 cup White Sugar
    1 cup Brown sugar
    2 Eggs, room temperature
    2 tsp Vanilla
    3 cups All-purpose flour
    1 tsp Baking soda
    2 tsp Hot water
    1 cup Milk chocolate chips
    1 cup Semi-sweet chocolate chips
    1 cup Candy cane/or peppermint candy pieces

    Directions:

    Preheat oven to 350 F (175ºC)
    Cream the butter, white sugar and brown sugar on medium/high speed until light and fluffy. Add eggs, one at a time, incorporating after each addition. Dissolve the baking soda in the hot water, then mix into the batter with the vanilla and salt. Stir in flour, chocolate chips and candy pieces. Drop large spoonfuls or scoops onto a baking pan lined with a COOKINA® Cuisine Reusable Baking Sheet, spacing cookies 2” apart.
    Bake on the middle rack, in a preheated oven for 10-13 minutes or until edges are golden.
    Let cookies cool on wire rack and enjoy!
