Quick Chocolate Covered Strawberry Pancakes
Since Valentines Day I have been on a chocolate covered strawberry kick so when I saw that I had breakfast for dinner on my menu, I knew what I wanted to make! Chocolate covered strawberry pancakes! With 5 of us coming and going we LOVE to have breakfast for dinner but we also know it needs to be quick because of schedules. Enter Krusteaz Light & Fluffy Buttermilk complete pancake mix. I was sent a super nice gifting of products in order to facilitate this blog post but as always, my opinions are mine and mine alone!
As my luck would have it, I had a new package of strawberries that I intentionally purchased specifically to make chocolate covered strawberries but decided to try something a little different.
I have always loved having strawberries on my pancakes but I had never made pancakes with the strawberries cooked into them. I know, doesn’t sound like much, but honestly, I have never done it. I’m all for living on the edge nowadays (totally not) so I’m going to give this a try and see how I like it.
First I took about a 1/4 cup of milk chocolate chips and chopped them. Then I took my strawberries and diced them. Next I started to make my buttermilk pancakes. All I had to do for that was add water. What could be easier than that? NOTHING!! I mixed in my chopped chocolate chips and diced strawberries (and shhhhhhhh, I added some flax seed to it but no one but you and me know this) and put them on my griddle.
To top it off, all I did was add some cut strawberries on top with a little squirt of whipped cream and a drizzle of chocolate syrup. I totally could have gone super fancy and made a few chocolate covered strawberries and drizzled melted milk chocolate but I didn’t have that kind of time this night. I however, really think my chocolate covered strawberry pancakes were perfect for this busy family on the go and everyone else agreed. I didn’t even have any leftovers! 🙁
I normally buy just a basic store brand pancake mix so when my husband tried them for the first time he was kind of speechless and for him that’s saying a lot! His most common saying after every few mouthfuls, “I can’t believe how light these are”. They were exactly as the box describes, light and fluffy! Will I be using the Krusteaz brand again for pancakes? ABSOLUTELY!
