Simply Filling Crockpot Chili
My neighbor is an awesome cook and many nights she will text me and ask me if we would like some of her leftovers. Usually I will take them because they are so good….and if I am not in the mood to cook, at least I’ll have a good meal for one or two of the family members, lol. Sounds bad, but it’s always a treat when we get a text! I am not a big chili fan but one night she brought over her chili with some egg noodles and cornbread {I think it was cornbread… I don’t eat it, so I don’t really know what it was} and I took one bite and fell in love with it! I loved it even more when she told me how easy it was to make. I love easy meals. And ones that you make in a crockpot with limited ingredients, even better! What surprised me the most was that after looking at the Simply Filling food list, everything that was in this recipe was on that list making this a Simply Filling Crockpot Chili recipe!
Ingredients:
1 can of crushed tomatoes
1 can of Rotel {any heat will do, but we like the mild}
1 can of kidney beans
1 pound of ground beef {93/7%}
1 onion
1 1/2 Tablespoons of chili powder
1 teaspoon cumin
1/2 teaspoon salt
1 teaspoon pepper
How do you make this amazing Simply Filling Crockpot Chili recipe you ask?
Brown your ground beef and dice your onions. That’s about it. Then, pour it all into your crockpot.
Set it on low for about 2-4 hours. You are really just heating it all up. It will also start to look get a little more “liquidy” and no that’s not a real word, but that’s the best way to describe it.
When it’s done, I usually serve our with {fat-free if you’re following the Weight Watchers Simply Filling plan} cheese and egg noodles and it becomes more of a chili mac, but my husband doesn’t like the noodles so he just eats his with oyster crackers. Or, if we have them in the house, he will make a chili dog. It’s SO yummy, so quick and SO easy!
I had enough left over so I froze it in individual sizes so I can have some when ever I want for lunch during the week! 🙂

Upon my recent chili making debacle, {made it with diced tomatoes instead of crushed}, I luckily had one frozen 2-serving size portions left over so my husband could make himself a couple chili dogs for dinner. Frozen leftovers = lifesavers!

I love easy crock pot recipes. Chili is one of our favorites to cook in it too.
It’s literally the easiest chili recipe I’ve ever found. I love just dumping it all into the crockpot {after browning the meat that is}. An old friend gave me a recipe once and it seriously had about 27 steps and by the time it was done, I was so tired!!! Fast & easy…that’s how I like my recipes! *wink wink*

Oh, yes, the smaller can. I accidentally made it with diced tomatoes this week and it wasn’t as good so make sure they are the crushed tomatoes to avoid making my mistake, lol!
